Compared to its cousin adzuki, mung is juicier, light on the starch, and vaguely sweet. This is the most widely sold sprout in the world. To clean mung sprouts, empty the sprouts into a pot full of water, stir and skim off the green hulls as they float to the top. Of course, it is perfectly fine to eat some hulls – it is just fiber.
