It is the form of millet used in bird seed. The shell is removed for cooking, otherwise your millet would taste a little like eating peanuts without removing the shell. Therefore, none of the millet you can buy in a health food store will sprout. Millet is gluten-free in both the sprouted and unsprouted forms.
