Garbanzos are big beans, which means they are starchy. Sprouting is the only way you can eat these beans raw. Still, because of their large size, eat garbanzos sparingly or add some cooking time to make them more digestible. Because they are already broken down thanks to germination, cooking time can be gentle and brief. It’s a matter of volume and taste preference, but a low flame and about 10 minutes is about all you need. Garbanzos are a good source of protein (about 9%) and have about 28% starch. Grow them in a sprout bag for best results. Garbanzos need more air circulation and drainage than can’t be provided by a jar. Garbanzos are ready in 4-5 days and also have a 1 inch tail. Refrigerate the garbanzos as soon as they reach prime.
